Switch up your breakfast routine with this quick and easy baked dish! Ready in just 15 minutes.
Ingredients:
  • 3/4 cup shredded Cheddar cheese (3 oz)
  • 2 cups refrigerated shredded hash-brown potatoes (from 20-oz bag)
  • 1/4 cup chopped green onions (4 medium)
  • 1/2 teaspoon seasoned salt
  • 1/8 teaspoon pepper
  • 2 eggs
  • 1/8 teaspoon Italian seasoning
Instructions:
  • Preheat oven to 400°F. Grease 2 (2-cup) ovenproof bowls or ramekins with cooking spray and set aside 2 tablespoons of cheese for later. In a medium bowl, combine the rest of the cheese, potatoes, onions, 1/4 teaspoon of seasoned salt, and pepper. Press the mixture into the bottom and up the sides of each bowl, creating an indentation in the center.
  • Bake until golden brown and crisp, approximately 25-30 minutes. Remove from oven and crack an egg into each cup. Sprinkle with 1/4 teaspoon seasoned salt, Italian seasoning, and 2 tablespoons of reserved cheese.
  • Continue baking in the oven for 8 to 12 minutes more, until the eggs are fully cooked to your liking.
