Elevate your breakfast game with these individual baked breakfast casseroles.
Ingredients:
  • 6 eggs
  • 1 can (12 oz) evaporated milk
  • 1/2 teaspoon pepper
  • 1 bag (30 oz) frozen country-style shredded hash brown potatoes
  • 2 cups shredded pepper Jack cheese (8 oz)
  • 1 bag (9.6 oz) refrigerated fully cooked pork sausage crumbles (about 2 1/2 cups)
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup sour cream
  • Chopped fresh cilantro, if desired
  • Salsa, if desired
Instructions:
  • Preheat oven to 350°F. Grease 10 (8-oz) individual baking dishes and arrange on a large rimmed baking sheet.
  • In a spacious bowl, vigorously whisk together eggs, milk, salt, and pepper. Stir in potatoes, cheese, sausage, onion, bell pepper, and sour cream until thoroughly combined. Transfer the mixture into baking dishes.
  • Bake without a cover for 30 minutes or until firm. Sprinkle cilantro on top and serve with salsa.
