Olé Salsa Potatoes

"Try a delicious twist by topping fluffy baked potatoes with taco filling for a quick 20-minute meal."
Ingredients:
  • 4 large baking potatoes (about 8 oz each)
  • 1 lb extra-lean (at least 90%) ground beef
  • 1/2 cup thick & chunky salsa
  • 1 teaspoon chili powder
  • 1 cup shredded Cheddar cheese (4 oz)
  • Sour cream, if desired
  • Additional thick & chunky salsa, if desired
Instructions:
  • Pierce potatoes all over with a fork and place on a microwavable paper towel. Microwave on High for 10-13 minutes or until tender, remembering to turn and rearrange halfway through. Allow to rest in the microwave for 5 minutes before serving.
  • Cook the ground beef in a 10-inch nonstick skillet over medium-high heat for 5 to 7 minutes, stirring frequently, until fully cooked. Drain if needed, then add 1/2 cup salsa and chili powder.
  • Cut the potatoes in half lengthwise and arrange 2 halves on each plate. Top the potatoes with the beef mixture, then sprinkle 1/4 cup of cheese over each serving. Serve with sour cream and extra salsa on the side.
