Zesty lime bar cookies with a kick of margarita mix.
Ingredients:
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup butter, softened
  • 4 eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/3 cup frozen margarita mix concentrate, thawed
  • 2 teaspoons grated lime peel
  • 1 tablespoon powdered sugar
Instructions:
  • Preheat the oven to 350°F. Combine base ingredients in a large bowl using an electric mixer on low speed until crumbly. Press the mixture firmly into the bottom of an ungreased 13x9-inch pan using floured fingers. Bake for 20 to 25 minutes until it turns light golden brown.
  • In a large bowl, gently whisk eggs. Add granulated sugar, 1/4 cup of flour, and baking powder, mix until smooth. Add margarita mix and lime peel, stir well.
  • Take the pan out of the oven and smoothly pour the filling over the warm base. Bake for an additional 18 to 22 minutes until the top is beautifully golden brown and the filling is firm. Let it cool completely for about 1 hour.
  • Before serving, elegantly dust the bars with a tablespoon of powdered sugar and slice them into 36 perfectly sized pieces.
