Margarita-infused chicken and gooey Cheddar and Monterey Jack cheese elevate these quesadillas to a whole new level.
Ingredients:
  • 1 cup bottled margarita mix
  • 2 tablespoons lime juice
  • 1 tablespoon garlic powder
  • 1 tablespoon vegetable oil
  • 2 skinless, boneless chicken breast halves - cut into bite-size pieces
  • 8 (10 inch) flour tortillas
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect bake.
  • Combine margarita mix, lemon juice, lime juice, and garlic powder in a large bowl and stir until well mixed.
  • In a large skillet over medium heat, sauté chicken in vegetable oil until fully cooked and juices run clear, about 5-7 minutes. Remove excess oil. Add margarita mixture to the skillet and simmer until most of it evaporates, around 15-20 minutes. Transfer chicken to a paper towel-lined plate to drain.
  • Create a stack alternating 4 tortillas, chicken, Cheddar cheese, and Monterey Jack cheese, then finish with the remaining 4 tortillas on top. Transfer the assembled quesadillas onto a spacious baking sheet, 1 or 2 at a time.
  • Bake quesadillas in the preheated oven for about 15 minutes or until the cheese is melted. Cut into quarters before serving.
