Marinate chicken with margarita mix for a zesty and tangy twist!
Ingredients:
  • 1/2 cup liquid nonalcoholic margarita mix
  • 3 tablespoons lime juice
  • 1 clove garlic, finely chopped
  • 3-to 3 1/2-pound cut-up broiler-fryer chicken
  • 1 teaspoon coarse salt
Instructions:
  • Combine margarita mix, fresh lime juice, and minced garlic in a resealable heavy-duty plastic bag. Add the chicken, seal the bag, and shake well to coat the chicken with the marinade. Refrigerate for at least 1 hour, rotating the bag occasionally, but not exceeding 24 hours. Remove the chicken from the marinade, but do not discard the marinade.
  • Preheat your grill for direct heat. Grill the chicken, skin-side up, and brush with marinade, then sprinkle with half of the salt. Cover and grill over medium heat, turning once, for about 15 minutes. Brush with the remaining marinade and sprinkle with the remaining salt. Continue grilling covered, turning occasionally, for 20 to 40 minutes or until the chicken is cooked through.
