Grilled Chicken Margherita Pizzas

Take the party outside with easy tortilla pizzas, perfect for any group size.
Ingredients:
  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 2 boneless skinless chicken breasts (about 8 oz)
  • 1/2 teaspoon seasoned salt
  • 4 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 1/2 cups finely shredded mozzarella cheese (6 oz)
  • 2 plum (Roma) tomatoes, thinly sliced (about 10 oz)
  • 1/4 cup sliced fresh basil leaves
Instructions:
  • Preheat gas or charcoal grill. In a small bowl, combine oil and garlic. Brush chicken breasts with 1 teaspoon of the oil mixture, then season with seasoned salt. Grill the chicken over medium-high heat, turning once, until the chicken reaches an internal temperature of 170°F, about 12 to 18 minutes. Lower the heat to medium-low and continue cooking.
  • Place tortillas on ungreased cookie sheets. Brush them with the remaining oil mixture. Cut the chicken into strips and lay them over the tortillas. Sprinkle 1/4 cup of cheese on each. Add tomato slices on top, then sprinkle with the remaining cheese and basil.
  • Using a wide spatula, gently transfer the pizzas onto the grill set over medium-low heat. Cover and cook for 3 to 5 minutes, rotating occasionally to ensure even cooking, until the cheese is melted and the crusts are crispy. Return the pizzas to the cookie sheets.
