Savor a comforting twist on Hawaiian loco moco: ground chuck topped with a fried egg and savory gravy.
Ingredients:
  • cooking spray
  • 1 pound ground beef chuck
  • 1 cup sliced onion
  • 0.5 cup water
  • 1 cup sliced mushrooms
  • 1 (12 ounce) jar brown gravy (such as Heinz®)
  • 4 eggs
  • 4 cups cooked rice
Instructions:
  • Prepare a generously greased skillet with cooking spray, then heat over medium heat.
  • Shape ground chuck into 4 equally sized patties.
  • Sear the patties in a hot skillet until they are firm, hot, and have a slight pink center, cooking for about 6 minutes on each side. Use an instant-read thermometer to ensure they reach an internal temperature of 140 degrees F (60 degrees C). Transfer the patties to a plate, keeping the drippings in the skillet.
  • Combine onion and water with reserved drippings, then simmer over low heat until onion softens slightly, approximately 5 minutes. Stir in mushrooms and continue cooking until mushrooms are done, around 5 more minutes.
  • Pour the savory gravy over the flavorful onion-mushroom mixture and give it a gentle stir. Let it cook until the gravy is beautifully hot for about 5 minutes. Carefully place the patties into the rich gravy and let them simmer until they are heated through.
  • Once the patties are simmering in the gravy, generously coat a separate skillet with cooking spray and heat it over medium heat. Cook the eggs in the skillet until the whites are opaque yet the yolks are still runny, which should take about 2 to 3 minutes.
  • Portion the cooked rice onto four plates. Add a beef patty on top of each rice portion and place an egg on top of each patty. Drizzle the gravy evenly over each serving.
