Savory oxtail soup loaded with beef, onions, and mushrooms for a delicious homemade meal.
Ingredients:
  • 2 pounds meaty oxtail pieces
  • 4 cups water, or as needed
  • 1 (8 ounce) package shiitake mushrooms, sliced
  • 1 cup chopped green onions
  • 0.5 cup chopped onions
  • 5 cloves garlic, chopped
  • 2 (1 inch) pieces fresh ginger, chopped
  • 4 large bay leaves
  • 0.5 cup dry white wine
  • 0.25 cup shoyu (Japanese soy sauce)
  • 1 bunch Chinese mustard greens, chopped
  • 2 tablespoons chopped fresh cilantro, or to taste
Instructions:
  • In a pot, submerge oxtails in water and bring to a boil for 30 minutes.
  • Return the meat to the pot and cover with water. Add mushrooms, green onions, onions, garlic, ginger, and bay leaves. Stir in wine and shoyu. Season with salt and pepper. Simmer over low heat for 2 to 3 hours until the meat is fall-off-the-bones tender.
  • Gently fold in vibrant mustard greens and fragrant cilantro before serving.
