Hazelnut Praline Cookie Bars

Delightful hazelnut praline cookie bars - perfect for sharing at any gathering.
Ingredients:
  • 1/2 cup hazelnuts (filberts), toasted, skins removed
  • 1 cup packed brown sugar
  • 3/4 cup butter or margarine, softened
  • 1 cup chopped hazelnuts (filberts)
  • 2/3 cup butter or margarine
  • 1/2 cup milk chocolate chips
Instructions:
  • Preheat oven to 350°F and line a 13x9-inch pan with foil, leaving a 1-inch overhang on two opposite sides. Spray the foil with cooking spray. In a food processor, finely grind 1/2 cup of hazelnuts by processing until smooth.
  • In a medium bowl, use an electric mixer to blend 1 cup of brown sugar and 3/4 cup of butter until smooth. Then slowly mix in flour and ground hazelnuts until combined. Press the mixture into a pan and bake for 10 minutes.
  • Spread a generous layer of 1 cup hazelnuts onto the partially baked crust. In a 2-quart saucepan, bring 2/3 cup butter and 1/2 cup brown sugar to a rolling boil over medium heat, stirring continuously. Let it boil for 1 minute, then carefully pour the mixture over the hazelnuts.
  • Bake for 15-16 minutes or until the edges are bubbling. Allow it to cool completely in the pan on a cooling rack for about 1 hour.
  • Place chocolate chips in a small microwave-safe bowl and microwave on High for 30 to 60 seconds, stirring once, until melted and smooth. Drizzle the melted chocolate over the bars, then refrigerate for 30 minutes until the chocolate is set. Use foil to easily lift the bars out of the pan, then cut into 8 rows by 4 rows.
