Elegant boxed truffles make the perfect gift.
Ingredients:
  • 165g caster sugar
  • 150g hazelnuts
  • 650g dark chocolate, chopped
  • 150ml pouring cream
  • 100g butter, chopped
  • 250g white chocolate, chopped
  • Silver and gold leaf, to decorate
  • Dutch cocoa, to decorate
Instructions:
  • 1. Prepare a large oven tray by lining it with baking paper. In a saucepan, combine sugar and 1/2 cup of water. Stir over medium heat until the sugar dissolves and the mixture comes to a boil. Using a pastry brush dipped in water, brush the sides of the pan to remove any sugar crystals. Increase the heat to medium-high and boil for 8-10 minutes until a caramel forms. Stir in the nuts and then pour the mixture over the prepared tray. Allow it to cool and harden.
  • Begin by placing 400g of dark chocolate in a heatproof bowl. In a saucepan, combine the cream and butter, bringing them to a gentle boil over medium heat. Pour the hot mixture over the chocolate and let it sit for 2 minutes. Stir until the chocolate is smooth, then chill in the refrigerator for 20 minutes, or until set.
  • Chop praline in a food processor until chunky. Mix with chocolate and chill for 30 minutes. Shape into balls using a tablespoon, then refrigerate for 1 hour until solid.
  • Melt the rest of the dark and white chocolate in separate heatproof bowls over simmering water. Let cool to room temperature. Coat half the truffles in white chocolate and the other half in dark chocolate. Place on a wire rack over a tray and refrigerate for 20 minutes until set. Decorate half of the white truffles with silver leaf and half of the dark truffles with gold leaf. Dust the rest of the dark truffles with cocoa powder. Store in the fridge for up to 2 weeks.
