Savory tofu and pork meatballs in flavorful soup garnished with pea vine shoots and dried shrimp, a delicious Chinese New Year family classic.
Ingredients:
  • 1 (14 ounce) package soft tofu
  • 7 ounces ground pork
  • 6 tablespoons cornstarch
  • 1 egg
  • 1 teaspoon chicken bouillon granules
  • 5 cups water
  • 10 dried shrimp
  • 1 cup fresh pea vine shoots, trimmed
Instructions:
  • In a large bowl, transform the tofu into a smooth paste using a large spoon. Mix in the pork, cornstarch, egg, 1 teaspoon of chicken bouillon granules, and 1 teaspoon of salt until thoroughly combined. Ready to move on to the next step!
  • In a large saucepan, bring the water and vegetable oil to a boil. Once boiling, lower the heat to keep it at an active simmer. With gloved hands, take about 1 tablespoon of the tofu mixture, roll it into a ball between your palms, and gently place it into the water. Repeat with the remaining tofu mixture. Allow the tofu balls to simmer undisturbed until they float to the surface, approximately 30 minutes.
  • Remove the pan from the heat, then gently mix in the dried shrimp, pea vine shoots, 1 teaspoon chicken bouillon granules, and 1/4 teaspoon salt. Enjoy while hot.
