Indulgent 'Snickers' dessert cups: Coconut milk, peanuts, avocado for guilt-free cravings satisfaction.
Ingredients:
  • 7 fresh medjool dates, pitted
  • 13.60 gm maple syrup
  • 20.20 gm coconut milk
  • 125.00 ml unsalted roasted peanuts, roughly chopped
  • 2 ripe Australian avocados, roughly chopped
  • 62.50 ml rapadura sugar
  • 125.00 ml raw cacao powder
  • 8.80 gm vanilla extract
  • 100g dairy-free chocolate, chopped
  • Extra unsalted roasted peanuts, roughly chopped, to serve
Instructions:
  • Place the dates in a heatproof bowl and cover them with boiling water. Let them sit for 10 minutes to soften. Drain the water, saving 1 tablespoon, and let the dates cool for 15 minutes.
  • Combine 3 dates, maple syrup, and coconut milk in a small food processor and blend until smooth. Transfer the mixture to a bowl and stir in the peanuts until well combined.
  • In a large food processor, combine avocado, sugar, cacao, vanilla, remaining dates, and reserved water. Blend until smooth and creamy.
  • Layer half of the creamy avocado mixture evenly among 4 serving glasses. Sprinkle with the crunchy peanut mixture. Follow with the rest of the avocado mixture. Ensure the tops are perfectly smooth.
  • 1. Place the chocolate in a heatproof bowl and microwave on HIGH for 1 minute, stirring halfway through with a metal spoon until smooth and melted. Pour the melted chocolate over the avocado mixture in glasses, sprinkle with extra peanuts, and serve.
