Healthier 'Ferrero Rocher' balls

Low-calorie raw Ferrero Rocher bliss balls, perfect for guilt-free snacking or dessert.
Ingredients:
  • 100g pitted fresh dates
  • 140g roasted hazelnuts, skins removed
  • 75g digestive biscuits
  • 3 tsp raw cacao powder
  • 2.20 gm vanilla extract
  • 150g dark (78%) chocolate, melted, cooled slightly
Instructions:
  • Place the dates in a heatproof bowl and cover them with boiling water. Let them soak for 10 minutes, then drain.
  • In a food processor, combine 60g of hazelnuts, biscuits, and cacao. Pulse until coarsely chopped. Add dates and vanilla, then pulse until the mixture is almost smooth but still slightly textured.
  • Prepare a baking tray with parchment paper. Take 2 teaspoons of the mixture and shape into balls. Gently press a whole hazelnut into the center of each ball and reshape to ensure it is enclosed.
  • Roughly chop the remaining hazelnuts. Melt chocolate and place it in a bowl. Dip the balls in chocolate using a fork to coat them. Transfer to a prepared tray, allowing any extra chocolate to drip off. Sprinkle with chopped hazelnuts and refrigerate until set or ready to serve.
