Upgrade classic chocolate chip cookies with applesauce to cut butter and include sweet raisins.
Ingredients:
  • 1 cup raisins
  • 4.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 cup butter, softened
  • 0.5 cup unsweetened applesauce
  • 1.5 cups packed brown sugar
  • 0.5 cup white sugar
  • 2 (3.4 ounce) packages instant vanilla pudding mix
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 2 cups semisweet chocolate chips
  • 2 cups chopped walnuts
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and sift the flour with the baking soda.
  • Using an electric mixer, cream together butter, applesauce, brown sugar, and white sugar in a large bowl until smooth. Add instant pudding and mix well. Beat in eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in vanilla extract. Gently mix in flour mixture until just combined. Fold in chocolate chips, raisins, and walnuts until evenly distributed. Drop dough by spoonfuls onto ungreased baking sheets, spaced 2 inches apart.
  • Bake in a preheated oven until the edges of the cookies turn golden brown, approximately 10 to 12 minutes. Then, allow them to cool on wire racks.
