Healthier twist on classic beef chow mein from Chinese takeout.
Ingredients:
  • 350g packet fresh chow mein noodles
  • 5.00 gm cornflour
  • 42.00 gm salt-reduced soy sauce
  • 24.40 gm oyster sauce
  • 62.50 ml shao hsing (Chinese rice wine)
  • 1 salt-reduced beef stock cube
  • 500g lean beef mince
  • 1 bunch baby pak choy, leaves separated
  • 1 brown onion, cut into thin wedges
  • 1 celery stalk, sliced diagonally
  • 2 carrots, cut into long strips
  • 225g can bamboo shoot slices, drained
  • 100g snow peas, trimmed, thinly sliced lengthways
  • 425g can baby corn, drained, halved lengthways
  • Thinly sliced red chilli, to serve
  • Green onion, to serve
Instructions:
  • Prepare the noodles according to the package instructions, then drain thoroughly and set aside.
  • In a small jug, blend cornflour and soy sauce together. Stir in oyster sauce, shao hsing, a stock cube, and 3/4 cup water until well combined.
  • Preheat a wok or large frying pan on high heat. Add oil and swirl to coat the pan. Add the mince and stir-fry, breaking it up, until browned, which should take about 3 to 5 minutes. Transfer the cooked mince to a heatproof bowl.
  • Stir-fry pak choy in the wok until leaves start to wilt, about 3 minutes, then transfer to a bowl. Next, stir-fry onion and celery until just starting to soften, about 3 to 4 minutes. Finally, add garlic and stir-fry for 30 seconds.
  • Add the mince back to the wok and pour in the sauce mixture. Stir-fry for 1 minute until the sauce boils. Mix in the carrot, bamboo shoots, snow peas, and corn. Stir-fry for 1 to 2 minutes until the vegetables are tender and the sauce thickens. Throw in the noodles and mix well. Serve the chow mein with pak choy, chili, and green onions on top.
