Skinny Beef Stroganoff

Ingredients:
  • 1 1/2 lb boneless beef sirloin steak
  • 2 teaspoons canola oil
  • 1 cup chopped onion (1 large)
  • 1 teaspoon finely chopped garlic
  • 2 cups Progresso™ beef flavored broth (from 32-oz carton)
  • 4 teaspoons Worcestershire sauce
  • 1 teaspoon dried basil leaves
  • 1 jar (4.5 oz) sliced mushrooms, drained
  • 1 tablespoon ketchup
  • 1 cup reduced-fat sour cream
  • 6 cups hot cooked medium egg noodles
Instructions:
  • Slice the beef into thin 1/8-inch strips, then brown in a hot nonstick skillet with oil, onions, and garlic until fully cooked and aromatic.
  • Combine 1 1/2 cups of broth, Worcestershire sauce, basil, salt, and pepper in the skillet. Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, stirring occasionally until the beef is tender. In a small bowl, whisk together flour and the remaining 1/2 cup of broth until smooth. Pour this mixture into the skillet, bring to a boil, and stir constantly for 1 minute.
  • Combine mushrooms and ketchup in the pan and simmer until warmed through, stirring occasionally. Take off the heat and mix in sour cream until fully incorporated. Serve over noodles.
