Skinny Beef and Noodle Layered Casserole

Lower fat and cholesterol meaty lasagna-style dish that can be prepared up to 24 hours in advance.
Ingredients:
  • 3 cups dried medium noodles (6 ounces)
  • 1 pound extra-lean ground beef
  • 2 cans (8 oz) Muir Glen™ tomato sauce
  • 1 teaspoon dried basil, crushed
  • 1/2 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Yoplait® plain yogurt
  • 1 package (8 oz) low-fat cream cheese, softened
  • 1/2 cup fat-free milk
  • 1/3 cup chopped onion (1 small)
  • 1 package (10 oz) frozen chopped spinach, cooked and well drained
  • 1/2 cup shredded reduced-fat cheddar cheese (2 ounces)
Instructions:
  • Preheat your oven to 350°F. Grease a 2-quart casserole or square baking dish and set it aside. Cook the noodles as directed on the package, then drain and set them aside.
  • In a large skillet, brown the beef until cooked through. Remove any excess fat. Add tomato sauce, basil, sugar, garlic powder, salt, and pepper to the skillet. Bring to a boil, then reduce heat and simmer uncovered for 5 minutes.
  • In a medium bowl, use an electric mixer to blend the yogurt and cream cheese until smooth. Mix in the milk and onion. Layer half of the noodles, meat mixture, and cream cheese mixture in a casserole dish, then add all of the spinach. Finish with the remaining meat mixture and noodles. Chill the leftover cream cheese mixture for later.
  • Lightly grease foil and cover casserole or baking dish. Bake for about 45 minutes until heated through. Uncover, top with remaining cream cheese mixture, sprinkle with cheddar cheese, and bake uncovered for an additional 10 minutes until cheese is melted. Allow to stand for 10 minutes before serving.
  • For easy prep, assemble the dish without baking, then cover with greased foil and refrigerate for up to 24 hours. When ready to cook, bake at 350°F for 1-1 1/2 hours until heated through. Finally, uncover, top with remaining cream cheese, sprinkle with cheddar, and bake for 10 more minutes until cheese is melted. Rest for 10 minutes before serving.
