Whip up a crowd-pleasing, light and creamy potato salad with your favorite mix-ins!
Ingredients:
  • 1 pound small new potatoes, quartered
  • 0.5 cup plain Greek yogurt
  • 0.25 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 cups steamed cauliflower rice
  • 0.25 cup finely chopped fresh parsley
Instructions:
  • Place potatoes in a large saucepan and cover with water. Boil until tender, about 15 to 20 minutes with the lid on. Drain and rinse with cold water. Allow potatoes to cool.
  • In a large bowl, combine yogurt, mayonnaise, mustard, salt, and pepper. Add cauliflower and fresh parsley, then gently mix in cooled potatoes until well coated. Cover and chill for at least 1 hour or up to 24 hours before serving.
