Healthier potato and sweet potato bake

Upgrade your favorite creamy potato bake with nutritious sweet potatoes and a healthier fat profile.
Ingredients:
  • 50g margarine spread
  • 62.50 ml plain flour
  • 375ml can Light & Creamy Evaporated Milk
  • 500g Carisma potatoes, unpeeled, cut into 2mm-thick slices
  • 1kg orange sweet potato, unpeeled, cut into 2mm-thick slices
  • 40.00 ml chopped fresh sage leaves
  • 62.50 ml finely grated parmesan (or vegetarian hard cheese)
  • 40.00 ml seed mix (pepitas and sunflower seeds)
Instructions:
  • Preheat your oven to 200C/180C fan-forced and generously grease a 6cm-deep, 20cm x 28cm oval roasting pan.
  • In a saucepan over medium-high heat, melt margarine. Add flour and cook for 1 minute until bubbling. Slowly stir in milk until smooth. Cook for 4-5 minutes until mixture thickens. Season generously with salt and pepper, then pour into prepared dish.
  • In a large bowl, mix together potato, sweet potato, sage, and garlic. Stand potato slices upright in a prepared dish, alternating between varieties. Spoon garlic and sage mixture between the slices. Top with parmesan (or vegetarian hard cheese) and seed mix. Season with salt and pepper.
  • Cover the dish with parchment paper followed by foil and bake for 50 minutes. Remove the cover and bake for an additional 30 to 35 minutes until golden and tender. Allow it to stand for 10 minutes before serving. Enjoy!
