Healthy meatloaf using lean beef, low-fat milk, and whole wheat bread crumbs. Family-friendly and lower-calorie option.
Ingredients:
  • 1.5 pounds lean ground beef
  • 1 egg
  • 1 onion, chopped
  • 1 cup low-fat (1%) milk
  • 1 cup whole wheat bread crumbs
  • 0.5 cup chopped fresh parsley
  • 1 large carrot, grated
  • 1 tablespoon brown sugar
  • 2 tablespoons prepared mustard
  • 0.33333334326744 cup ketchup
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x5-inch loaf pan.
  • In a large bowl, mix together beef, egg, onion, milk, bread crumbs, parsley, and carrot, and season with salt and black pepper. Transfer the beef mixture to a loaf pan.
  • Combine brown sugar, mustard, and ketchup in a small bowl, then generously drizzle the mixture over the meatloaf.
  • Roast in the preheated oven for approximately 1 hour, or until the center is no longer pink. Ensure the internal temperature reaches at least 160°F (70°C) using an instant-read thermometer.
