Healthier Grandmother's Buttermilk Cornbread

Healthier version of Grandma's sweet cornbread: Uses low-fat dairy, less sugar, and whole corn for moisture.
Ingredients:
  • 6 tablespoons butter
  • 1 cup low-fat buttermilk
  • 2 tablespoons white sugar
  • 0.5 teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup white whole wheat flour
  • 1 cup frozen corn
Instructions:
  • Preheat your oven to 375°F (175°C).
  • Preheat a 9-inch iron skillet in the oven for 10 minutes. Melt butter in the skillet, then brush the sides with it. Pour any leftover butter into a large bowl and whisk in buttermilk and eggs.
  • In a separate bowl, combine sugar, baking soda, cornmeal, whole-wheat flour, and salt. Whisk in the cornmeal mixture and frozen corn into the buttermilk mixture. Transfer the cornbread mixture into the skillet.
  • Bake until a toothpick inserted in the center comes out clean, for about 20-25 minutes in a preheated oven.
