Hearty slow cooker pot roast with fresh vegetables for a wholesome twist.
Ingredients:
  • 3 pounds chuck roast
  • 1 cup reduced-sodium beef stock
  • 2 onions, chopped
  • 2 pounds potatoes, peeled and cubed
  • 3 carrots, chopped
  • 1 stalk celery, chopped
  • 0.25 cup chopped fresh parsley
Instructions:
  • Season chuck roast generously with a sprinkle of salt and pepper.
  • 1. Preheat a large skillet over medium-high heat. Sear roast on all sides for about 4 minutes each. Place the roast in a slow cooker. Deglaze the skillet by pouring in beef stock and scraping off the flavorful bits with a wooden spoon. Add broth and onions to the slow cooker. Cover and slow cook on Low for 5 hours.
  • Combine potatoes, carrots, celery, and parsley in the slow cooker. Cover and cook on Low for 3 more hours or until the roast is tender and fully cooked.
