Healthier zucchini bread with whole wheat flour, low-fat milk, extra zucchini, and less oil and sugar for ultimate moistness and flavor.
Ingredients:
  • 1 teaspoon salt
  • 1.5 cups all-purpose flour
  • 1.5 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 0.5 cup low-fat milk
  • 0.5 cup vegetable oil
  • 1.5 cups white sugar
  • 3 teaspoons vanilla extract
  • 3 cups grated zucchini
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C). Prepare two 8x4-inch pans by greasing and flouring them.
  • Combine all-purpose flour, whole-wheat flour, salt, baking soda, baking powder, and cinnamon by sifting into a bowl.
  • In a large bowl, vigorously whisk together eggs, milk, vegetable oil, sugar, and vanilla extract. Gently fold in sifted ingredients until fully incorporated. Mix in zucchini and walnuts until evenly distributed. Transfer batter to prepared pans.
  • Bake in a preheated oven for 40 to 60 minutes or until a toothpick inserted in the center of the bread comes out clean. Let it cool in the pans on a wire rack for 20 minutes before removing the bread from the pan and allowing it to cool completely.
