Pressure cook pork for juicy tender meat in half the time without sacrificing flavor.
Ingredients:
  • 18.20 gm olive oil
  • 1kg pork shoulder
  • 1 brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp fennel seeds
  • 1 bay leaf
  • 4 sprigs thyme
  • 82.50 gm white wine
  • Large ciabatta roll, to serve
  • Vegetables, to serve
  • Baby tomatoes, to serve
  • Basil, to serve
  • Baby rocket, to serve
  • Dijon mustard, to serve
Instructions:
  • Heat oil in inner pot of Philips All In One Cooker on high saute/sear setting for 10 minutes with lid open. Season pork with salt and pepper, make cuts with sharp knife. Add pork to hot pot, cook for 5 minutes until browned. Set aside. Add onion, garlic, fennel seeds, bay leaf, thyme. Stir occasionally and cook for 5 more minutes. Return pork to pot, add wine. Close lid, seal knob, pressure cook on meat/poultry setting for 40 minutes. Release steam and open lid.
  • Transfer the succulent pork along with its flavorful juices to an elegant serving dish, and use two forks to shred it into deliciously tender pieces.
  • Assemble a platter with ciabatta, pulled pork, chargrilled vegetables, rocket, mustard, and aioli for guests to create their own sandwiches.
