Healthier sweet potato pie with whole wheat crust and reduced sugar, bursting with flavorful spices for a guilt-free indulgence.
Ingredients:
  • 1 (1 pound) sweet potato
  • 0.5 cup butter, softened
  • 0.5 cup white sugar
  • 1 cup low-fat milk
  • 2 eggs
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cinnamon
  • 1 (9 inch) unbaked whole wheat pie crust
Instructions:
  • Cook the whole sweet potato in its skin in a small pot for 40 to 50 minutes until tender. Drain the sweet potato, cool it under cold water, and peel off the skin.
  • In a large bowl, mash the sweet potato. Add butter and beat thoroughly with an electric mixer. Incorporate sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract on medium speed until the mixture is smooth. Transfer the filling into an unbaked pie crust.
  • Bake in a hot oven until a knife inserted in the center comes out clean, about 45 to 55 minutes. The pie will rise like a soufflé and then settle as it cools.
