Healthier, more nutty zucchini bread with less sugar and buckwheat flour, makes two loaves.
Ingredients:
  • 1 cup vegetable oil
  • 1.5 cups white sugar
  • 2 cups grated zucchini
  • 2 teaspoons vanilla extract
  • 1 cup buckwheat flour
  • 1 tablespoon ground cinnamon
  • 0.25 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup chopped walnuts, toasted
Instructions:
  • Preheat your oven to a cozy 325 degrees F (165 degrees C) while you prep two 8x4-inch loaf pans by greasing and flouring them.
  • In a large bowl, whip eggs until light and frothy. Add oil and sugar, then mix well. Stir in zucchini and vanilla extract. In another bowl, combine all-purpose flour (or gluten-free flour), buckwheat flour, cinnamon, baking soda, baking powder, salt, and nuts. Gently fold the flour mixture into the egg mixture. Divide the batter into prepared pans.
  • Bake until a toothpick inserted in the center comes out clean, approximately 60-70 minutes in a preheated oven.
