Deliciously fudgy zucchini brownies: a sneaky way to sneak veggies into your kids' treats with whole wheat flour and less sugar.
Ingredients:
  • cooking spray
  • 2 medium zucchini, chopped
  • 1 cup prunes
  • 1 cup brown sugar
  • 0.5 cup natural cocoa
  • 0.25 cup vegetable oil, scant
  • 1 teaspoon kosher salt
  • 1.5 cups whole wheat flour
  • 0.5 cup all-purpose flour
  • 1.5 teaspoons baking soda
  • 1 tablespoon Demerara sugar
  • 0.5 cup white chocolate chips
Instructions:
  • Preheat the oven to a cozy 350 degrees F (175 degrees C), then give your baking dish a quick spritz with cooking spray.
  • Blend zucchini in a powerful blender until smooth. Measure 2 cups of zucchini puree, then add prunes until it reaches 3 cups. Blend again. Add brown sugar, cocoa, oil, salt, and vanilla extract to the blender; blend until completely smooth.
  • Combine whole wheat flour, all-purpose flour, and baking soda in a bowl, whisking until well mixed. Add nuts and stir to combine. Gently fold in chocolate mixture until just combined; be careful not to overmix as batter will be thick.
  • Smooth the batter in the prepared baking pan to your desired level. Sprinkle Demerara sugar and chocolate chips over the top.
  • Bake until brownies spring back when touched in the middle or a toothpick comes out clean, about 30 minutes in the preheated oven. Let cool before enjoying.
