Wholesome meal prep for two with veggies and bold flavors, calorie-conscious.
Ingredients:
  • 30.00 ml chopped fresh continental parsley leaves
  • 30.00 ml chopped fresh mint leaves
  • 1 tsp dried chilli flakes
  • 1 tsp finely grated lemon rind
  • 10.60 gm fresh lemon juice
  • 2 x 120g skinless salmon fillets
  • 250g sweet potato, peeled, cut into 5mm-thick rounds
  • 150g broccoli, cut into florets
  • 200g cherry tomatoes
  • 1/2 lemon, cut into wedges
  • 40.00 ml natural yoghurt
Instructions:
  • Mix together fresh parsley, mint, spicy chilli, and zesty lemon zest and juice in a small bowl. Then, gently press half of this delightful herb mixture onto the succulent salmon fillets. Next, place the salmon in a sealed glass or plastic container along with the remaining herb mixture in a separate sealed container for freshness.
  • Combine sweet potato, broccoli, and tomatoes in a spacious glass or plastic container.
  • Place the containers in the freezer for up to 3 months or until the night before cooking. Thaw overnight in the refrigerator.
  • Preheat the oven to 200C/180C fan forced. Arrange the sweet potato in a single layer on a lined large baking tray and lightly spray with oil. Bake for 20 minutes. Then, add the rest of the vegetables and place the salmon on top. Bake for an additional 10-12 minutes until the salmon reaches your desired doneness.
  • Plate salmon and vegetables. Sprinkle with herbs from the container. Serve with lemon wedges and yogurt on the side.
