Serve a flavorful and healthy fish dish with spicy chili salsa and crunchy walnuts.
Ingredients:
  • 80g pitted green olives
  • 187.50 ml chopped fresh coriander
  • 82.50 ml chopped fresh basil
  • 60g dry-roasted walnuts, coarsely chopped
  • 1/2 red onion, finely chopped
  • 1 long fresh green chilli, thinly sliced
  • 30.00 ml red wine vinegar
  • 13.80 gm extra virgin olive oil
  • 2.50 gm caster sugar
  • 1 (about 1.3kg) skin-on salmon fillet, pin boned
  • 60ml (1/4 cup) fresh lemon juice
Instructions:
  • In a bowl, soak olives in cold water for 20 minutes, then drain and halve them. Return olives to the bowl and add coriander, basil, walnuts, onion, and chili, stirring to combine. In a small jug, whisk vinegar, oil, and sugar together with a fork, then pour over the olive mixture and toss until well combined. Season with pepper to taste.
  • Preheat your oven to 200°C. Line a roasting pan or ovenproof dish with non-stick baking paper. Put the salmon in the pan, drizzle with lemon juice, season with pepper, then cover with another piece of baking paper. Bake for 20 minutes until the salmon flakes easily with a fork.
  • Gently place the salmon on a generous serving platter. Spoon over the flavorful olive mixture and garnish with lemon wedges for a fresh touch.
