Grilled Salmon with Lemon-Herb Butter Sauce

Spring-inspired grilled salmon with zesty lemon-dill sauce - perfect for any occasion.
Ingredients:
  • 2 tablespoons finely chopped shallots
  • 1/4 cup dry white wine
  • 3 tablespoons fresh lemon juice
  • 6 tablespoons cold butter
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon finely chopped fresh chives
  • 1/8 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 lb. salmon fillets, cut into 4 pieces
  • 1/4 teaspoon salt
Instructions:
  • Preheat a gas or charcoal grill. In a small saucepan, simmer shallots, wine, and 3 tablespoons lemon juice until the mixture reduces to about 2 to 3 tablespoons, about 5 to 7 minutes on medium heat, stirring occasionally.
  • Off the heat, gradually incorporate one tablespoon of chilled butter at a time until fully blended. Add dill, chives, and 1/8 teaspoon of pepper. Cover to maintain warmth.
  • Combine the oil and lemon juice in a small bowl and mix well. Brush the mixture over the salmon fillets, then sprinkle with salt and a quarter teaspoon of pepper.
  • Once the grill is hot, place the salmon skin side up on the gas grill over medium heat or on a charcoal grill 4 to 6 inches from the medium coals. Grill for 8 to 10 minutes or until the fish flakes easily with a fork, flipping it once and brushing with the remaining oil mixture. Reheat the butter sauce over very low heat, stirring constantly, if needed. Serve the salmon with the butter sauce.
