Grilled Cedar Plank Salmon with Lemon and Dill: Perfectly smoked and seasoned for a delicious twist on a classic fish dish.
Ingredients:
  • 1 (3 pound) whole filet of salmon, skin on, scored (up to but not through the skin) into serving pieces
  • 6 tablespoons extra-virgin olive oil
  • 4 large garlic cloves, minced
  • 0.25 cup minced fresh dill
  • 2 teaspoons salt
  • 1 teaspoon lemon zest, plus lemon wedges for serving
Instructions:
  • Submerge a untreated cedar plank (or planks) that can fit a side of salmon (5 to 7 inches wide and 16 to 20 inches long) in water with a weight on top to keep it underwater for 30 minutes to 24 hours.
  • Prepare the grill by either lighting a charcoal fire on half of the grill or preheating the grill burners on high for 10 minutes. While the grill heats up, combine oil, garlic, dill, salt, pepper, and lemon zest. Coat the salmon with this mixture, making sure to rub it into the scored areas.
  • Lay the soaked cedar on a hot grill to let it start smoking, about 5 minutes. Place the salmon on the heated plank, away from direct heat, and cook covered until just opaque throughout (reaching 130 degrees on a meat thermometer), for about 20 to 25 minutes or longer depending on thickness and grill temperature. Allow it to rest for 5 minutes before serving alongside lemon wedges.
