Healthy chocolate orange truffles

Indulgent chocolate orange energy bites with dates, almonds, and chia seeds for a wholesome treat.
Ingredients:
  • 40.00 ml black chia seeds
  • 60ml (1/4 cup) fresh orange juice
  • 85g (1/2 cup) dry-roasted almonds, plus extra 1 tbsp finely chopped
  • 2 tsp finely grated orange rind
  • 200g medjool dates, pitted, coarsely chopped
  • 45g (1/2 cup) desiccated coconut
  • 40.00 ml cacao powder
  • 150g dark chocolate (85% cocoa), chopped
Instructions:
  • Mix together the chia seeds and orange juice in a small bowl and let it sit for 10 minutes to absorb.
  • In a food processor, grind the almonds until coarsely ground. Then add chia mixture, orange rind, date, coconut, and cacao powder. Process until well combined. Roll mixture into tablespoon-sized balls.
  • Prepare a baking tray with parchment paper. Melt the chocolate in a heatproof bowl over simmering water. Dip each ball into the chocolate, roll it around evenly using a fork. Place the coated truffles on the tray, using a fork to drain excess chocolate and gently transfer them.
  • Continue the process with the rest of the balls. Sprinkle the additional almonds on top. Allow them to set. If the weather is warm, refrigerate until set. Store in an airtight container in a cool place for up to 2 weeks.
