Healthy Crustless Quiche Base Recipe

Customize your crustless quiche with sauteed veggies, meats, cheese, and herbs for a delicious twist!
Ingredients:
  • 1 cup Shamrock Farms® Premium Sour Cream
  • 1 cup Shamrock Farms® Cottage Cheese
  • cooking spray
  • 1 cup frozen mixed vegetables, cooked and drained
  • 4 eggs
  • 0.25 cup unbleached all-purpose flour
  • 1 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and generously coat an 8x8-inch baking dish with cooking spray.
  • Let the cooked mixed vegetables cool down.
  • In a medium bowl, mix eggs, Shamrock Farms Premium Sour Cream, Shamrock Farms Cottage Cheese, flour, salt, and pepper until smooth, either by stirring or using a food processor for about 1 minute.
  • Combine the egg mixture with the vegetables in a bowl, then stir in 1 cup of cheese. Transfer the mixture to a baking dish, spread it out evenly, and sprinkle the remaining cheese on top.
  • Bake the quiche for 45 minutes until it's set. Once done, let it cool, refrigerate, then cut into squares and serve.
