Quick and easy healthy chocolate mug cake made in the microwave with just 6 ingredients, ready in under 7 minutes.
Ingredients:
  • 1 fresh date, pitted, finely chopped
  • 60ml (1/4 cup) unsweetened apple puree
  • 50.00 ml oat bran
  • 5.00 gm cocoa powder, plus extra to dust
  • 0.63 gm ground cinnamon
Instructions:
  • Transfer the date to a medium heatproof bowl, pour in one teaspoon of boiling water, and mash it with a fork.
  • Stir together the egg, apple, oat bran, cocoa powder, and cinnamon until smooth and thoroughly mixed.
  • Transfer the batter into a 160ml (2/3 cup) microwave-safe mug or ramekin. Microwave on HIGH for 1 1/2 minutes or until the cake pulls away from the sides and the top is firm. Sprinkle with additional cocoa before serving.
