Easy kid-friendly pancakes made without scales, just a cup or mug.
Ingredients:
  • 1 large free-range egg
  • 1 cup of self-raising flour
  • 1 cup of milk
  • sea salt
  • 200 g blueberries
  • olive oil
  • 4 tablespoons natural yoghurt
Instructions:
  • Prepare the batter by cracking the egg into a large mixing bowl, then adding the flour, milk, and a pinch of sea salt. Whisk until smooth, then gently fold in the blueberries if desired. Heat a large frying pan over medium heat, add ½ tablespoon of oil, and spread it evenly. Ladle the batter onto the pan, leaving space between each for spreading. Cook for 1 to 2 minutes until bubbles appear and the bases are golden, then flip with a fish slice. Once both sides are golden, transfer pancakes to a plate. Repeat with remaining batter, adding oil between batches if needed. Serve hot with a dollop of natural yogurt and extra berries, if desired.
