Quick and delicious pancakes perfect for family brunch. Customize with sweet or savory toppings.
Ingredients:
  • 1 large free-range egg
  • 1 cup of self-raising flour
  • 1 cup of milk
  • 200 g blueberries
  • olive oil
  • 4 tablespoons natural yoghurt
Instructions:
  • In a large mixing bowl, crack the egg and combine with flour, milk, and a pinch of sea salt. Whisk into a smooth batter, then gently fold in the blueberries. Heat olive oil in a non-stick frying pan over medium heat. Ladle the batter into the pan, leaving space between each pancake. Cook until bubbles appear, then flip and cook until golden. Transfer to a plate and repeat with remaining batter, adding more oil if necessary. Serve hot with a dollop of yogurt and fresh berries on top.
