One-cup pancakes, tropical yoghurt & mango

Easy and delicious pancake recipe - no scales needed, just a cup or mug!
Ingredients:
  • 2 ripe bananas
  • 1 tablespoon desiccated coconut
  • 250 g natural yoghurt
  • 1 large free-range egg
  • 1 cup self-raising flour
  • 25 g unsalted butter
  • 2 ripe mangos
  • 1 lime
Instructions:
  • Begin by peeling and adding bananas to a bowl. Mash them with a fork, then mix in the coconut and yogurt. In a separate large mixing bowl, crack an egg and whisk in the flour, milk, and a pinch of sea salt until a smooth batter forms. Slice the mangos away from their stones, score a crisscross pattern, and remove the flesh from the skin. Heat half of the butter in a large frying pan over medium heat. Use a ladle to spoon the batter into the pan, cooking until bubbles appear and the bases are golden. Flip and cook until both sides are golden, then transfer to a plate. Wipe the pan clean, add the remaining butter, and repeat until all the batter is used. Serve immediately, topped with flavored yogurt, fresh mango, and lime wedges for squeezing.
