Try my simple one-cup method for perfect gluten-free pancakes - quick, easy, and irresistibly fluffy.
Ingredients:
  • 1 large free-range egg
  • 1 heaped cup of gluten-free self-raising flour (250g)
  • 1 cup of milk (300ml)
Instructions:
  • - In a large mixing bowl, crack 1 large egg and add 1 heaped cup (250g) of gluten-free self-raising flour, 1 cup (300ml) of milk, and a tiny pinch of sea salt. Whisk until smooth. - Drizzle ½ tablespoon of olive oil in a large non-stick frying pan over medium heat, spreading it out evenly by tilting the pan. - Add a few ladles of batter to the pan, leaving space between each for spreading. Cook for 1 to 2 minutes until bubbles form and the bases are golden, then flip. - Once both sides are golden, transfer the pancakes to a plate. Repeat with the remaining batter, adding more olive oil between batches if needed. - Serve the hot pancakes with your favorite toppings.
