One-pan beef and maple sweet potato recipe

Whip up a quick and healthy gluten-free one-pan hash in under 30 minutes!
Ingredients:
  • 500g beef rump steak, excess fat trimmed
  • 1 brown onion, finely chopped
  • 500g packet frozen cubed sweet potato
  • 400g can black beans, rinsed, drained
  • 60ml (1/4 cup) maple syrup
  • 2 long fresh green chillies, thinly sliced
  • 1/2 bunch fresh coriander, leaves picked
  • Lime wedges, to serve
Instructions:
  • In a large frying pan, heat half of the oil over high heat. Season the steak and cook each side for 2-3 minutes for medium doneness, or to your preference. Once cooked, transfer the steak to a plate and allow it to rest.
  • 1. Heat the remaining oil in the pan over high heat. Add onion, sweet potato, and ground coriander. Cook for about 8 minutes until the sweet potato is tender. Introduce beans, maple syrup, and half of the chili. Season and stir occasionally for 5 more minutes until heated through.
  • Slice the beef thinly and layer it over the sweet potato mixture. Garnish with fresh coriander leaves and the rest of the chilli. Accompany with lime wedges for serving.
