Healthy one-pan teriyaki beef and rice recipe

Quick and easy one-skillet beef teriyaki ready in 20 minutes, perfect for a busy weeknight meal over fluffy rice.
Ingredients:
  • 2 x 250g Australian beef sirloin steaks, excess fat trimmed
  • 2 tsp sesame oil
  • 750g pkt ready-to-stir-fry traditional vegetables
  • 450g pkt microwave brown rice
  • Sliced green shallots, to serve
  • Sesame seeds, to serve
  • Teriyaki sauce
  • 2 ½ tbs salt-reduced soy sauce
  • 40.00 ml mirin
  • 27.00 gm maple syrup
  • 1 garlic clove, crushed
  • 1 tsp onion powder
  • 1 tsp finely grated fresh ginger
Instructions:
  • Allow the beef to rest at room temperature for 20 minutes.
  • Prepare the teriyaki sauce by mixing together all ingredients in a small bowl.
  • Massage beef with a touch of oil and season generously. Sear beef in a large deep frying pan over medium-high heat for 3 minutes on each side for medium doneness. Pour in 1 tablespoon of teriyaki sauce and toss beef to coat. Place beef on a plate, tent loosely with foil, and let it rest for 10 minutes before slicing thickly.
  • In a pan over medium heat, heat the remaining oil. Add the vegetables and cook for 3-4 minutes, stirring occasionally until just tender. Then, add the rice and remaining teriyaki sauce. Stir and cook for 2 minutes until the rice is heated through.
  • Add the beef and its resting juices back to the pan. Sprinkle with shallots and sesame seeds before serving.
