One-pan Caprese chicken

Quick and healthy one-pan dinner, perfect for a busy day!
Ingredients:
  • 1/2 French shallot, finely chopped
  • 1 large garlic clove, crushed
  • 36.40 gm extra virgin olive oil
  • 82.50 ml fresh basil leaves, plus 1 tbsp finely chopped, extra
  • 2 large (about 700g) RSPCA Approved Chicken Breast Fillets, halved lengthways
  • 300g mixed baby tomatoes, halved
  • 4 (about 140g) bocconcini, sliced
  • 20.00 ml red wine vinegar
  • 2.50 gm caster sugar
  • Crusty bread, to serve
Instructions:
  • Mix shallot, garlic, 1 tablespoon of oil, and extra basil in a bowl. Season the mixture. In a large ovenproof non-stick frying pan over medium-high heat, heat the rest of the oil. Season the chicken and cook, turning occasionally, for 4 minutes until browned. Remove the pan from the heat.
  • 1. Preheat the oven grill to high. 2. Scatter tomatoes around the chicken. 3. Rub chicken with half the basil mixture. 4. Place bocconcini on top of the chicken and spoon over the rest of the basil mixture. 5. Drizzle tomatoes with vinegar, sprinkle with sugar, and season. 6. Grill for 4 minutes or until the cheese melts and tomatoes blister. 7. Sprinkle with basil. 8. Serve with bread.
