One-pan caprese chicken thighs: a delicious twist on a classic caprese salad, now in a flavorful skillet meal with juicy chicken.
Ingredients:
  • 8 boneless, skinless chicken thighs
  • Salt and pepper to taste
  • 3 Tablespoons good quality balsamic vinegar
  • 1/4 cup low-sodium chicken broth
  • 1 Tablespoon tomato paste
  • 1 lemon, zested and juiced
  • 1 teaspoon honey
  • 5 cloves garlic, minced
  • 1 Tablespoon fresh minced basil
  • 2 Tablespoons olive oil
  • 2 cups cherry tomatoes
  • Pinch of salt
  • 4 ounces shredded mozzarella
  • Additional torn fresh basil leaves for garnish
Instructions:
  • Dry the chicken thighs with paper towels, then generously season with salt and pepper.
  • In a large mixing bowl, mix together balsamic vinegar, chicken broth, tomato paste, lemon juice (saving zest), honey, minced garlic, and 1 tablespoon of minced basil. Add seasoned chicken thighs, coat with the balsamic mixture, and set aside, or refrigerate covered for up to 4 hours if time permits.
  • Heat a 12-inch skillet over medium heat, add chicken and marinade. Bring to a boil, cover, reduce heat to medium-low, and simmer for 5 to 7 minutes. Turn the chicken, increase heat to medium, and cook uncovered until done, for an additional 5 to 7 minutes. Use an instant-read thermometer to ensure chicken reaches an internal temperature of at least 165°F (74°C).
  • Transfer the cooked chicken and its delicious juices from the skillet to a serving platter. Cover loosely with foil to maintain its warmth.
  • Clean the skillet and heat olive oil over medium-high. Once the oil is hot, gently add tomatoes. Let them blister for 2 minutes without stirring. Afterward, gently stir and cook for another 2 minutes. Finish by sprinkling with a pinch of salt.
  • Uncover the dish, pour the tomatoes over the chicken, and layer with shredded mozzarella. Sprinkle the reserved lemon zest and torn basil on top. Serve while warm.
