One-pan teriyaki beef and rice recipe

Quick and budget-friendly beef mince dinner ready in 20 minutes with minimal ingredients.
Ingredients:
  • 4 green shallots
  • 18.40 gm vegetable oil
  • 500g Beef 3 Star Mince
  • 125ml (1/2 cup) teriyaki marinade
  • 5.00 gm cornflour
  • 500g packet frozen stir-fry vegetable mix
  • 450g packet microwave long-grain rice
Instructions:
  • Finely dice 2 shallots and julienne the rest. Soak the julienne slices in a bowl of ice water until ready to use.
  • In a large deep frying pan or wok, heat oil over high heat. Add beef and cook for 5 minutes, using a wooden spoon to break up any lumps. In a small bowl, combine teriyaki marinade and cornflour until smooth, then add to the beef and stir. Add vegetables, cover, and cook for 5 minutes, stirring occasionally, until vegetables are heated through.
  • Heat the rice according to the packet instructions, then mix in the chopped shallot. Drain the shallot curls and place the rice in serving bowls. Spoon the teriyaki beef over the rice and garnish with the shallot curls before serving.
