"One-pan rice bake topped with cauliflower blossoms - a beautiful and delicious dish that even kids will enjoy!"
Ingredients:
  • 2 x 450g pkts microwave long-grain rice
  • 60ml (¼ cup) mirin
  • 80ml (⅓ cup) teriyaki marinade
  • 3cm piece ginger, grated
  • 20.00 ml sesame oil
  • 2 green onions, thickly sliced diagonally
  • 28.60 gm honey
  • 250g pkt Perfection Fresh Cauli-Blossom, larger stems halved vertically
  • 39.60 gm Japanese mayonnaise
  • 40.00 ml drained pickled ginger
  • 3.00 gm sesame seeds, toasted
Instructions:
  • Preheat your oven to 200C/180C fan-forced, then grease a 5cm-deep, 20cm x 32cm baking dish, and line a baking tray with baking paper.
  • With your fingertips, gently break apart the rice grains in the packet. In a baking dish, combine the rice, mirin, 2 tbsp teriyaki marinade, fresh ginger, oil, and 3/4 of the onions. Mix well. Bake for 15 minutes, or until the rice is heated through.
  • In a medium bowl, mix honey and the rest of the teriyaki sauce. Add cauliflower florets and toss to coat evenly. Place the cauliflower mixture on a baking tray and pour over any remaining teriyaki sauce from the bowl. Bake for 10 minutes until the cauliflower is tender and lightly browned.
  • Arrange the Perfection Fresh cauli-blossom on top of the rice mixture, ensuring to pour over any leftover teriyaki mixture from the tray. Garnish with a drizzle of mayonnaise, pickled ginger, the rest of the onion, and sesame seeds. Serve and enjoy!
