Sheet-Pan Teriyaki Pork and Vegetables

Teriyaki-glazed pork tenderloin with sesame vegetables: Easy, quick, and perfect for the whole family!
Ingredients:
  • 1 lb pork tenderloin
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup La Choy™ teriyaki stir-fry sauce and marinade
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 cup uncooked jasmine rice
  • 1/4 teaspoon salt
  • 1/4 cup Annie’s™ Naturals organic Asian sesame dressing (from 8-oz bottle)
  • 1 tablespoon soy sauce
  • 1 bag (12 oz) Mann’s™ California stir fry mix vegetables
  • 1/4 cup thinly sliced green onions
Instructions:
  • Preheat the oven to 425°F and generously spray a 15x10x1-inch pan with cooking spray.
  • Place the pork in a pan, then massage it with oil and pepper flakes. Roast for 15 minutes, flip the pork, and set aside 2 tablespoons of teriyaki sauce. Glaze the pork with the remaining 2 tablespoons of teriyaki sauce.
  • In a large microwavable bowl, combine broth, rice, and salt. Cover with plastic wrap and microwave on High for 5 minutes. Switch to Medium (50%) and microwave for 15 more minutes. Allow it to stand covered for an additional 5 minutes. Gently remove the plastic wrap, give it a stir, and enjoy.
  • Combine dressing and soy sauce in a large bowl. Add vegetables and mix well to coat. Transfer the vegetables to the pan with pork. Roast for 14 to 16 minutes until pork reaches 145°F and vegetables are fork-tender.
  • Slice the pork and plate it evenly among 4 dishes. Drizzle the pork with 2 tablespoons of teriyaki sauce. Then, distribute the vegetable mixture among the plates and pour the pan drippings over them. Garnish with green onions and serve with rice.
