Lemon-tzatziki chicken

Greek-inspired one-pan family dish using tzatziki marinade for flavor and tenderness.
Ingredients:
  • 1 x 1.5kg whole free-range chicken
  • 2 x 200g tubs of tzatziki
  • 2 lemons
  • 4 mixed-colour onions
  • 300 g basmati rice
Instructions:
  • Carefully butterfly the chicken using a sharp knife. Coat the chicken with half of the tzatziki, lemon juice, sea salt, and black pepper. Marinate in the fridge for at least 2 hours. Preheat the oven to 180°C/350°F/gas 4. Finely chop half an onion, mix with lemon juice and salt to pickle. Quarter remaining onions and place in a tray with lemon. Add chicken skin side up, drizzle with olive oil, and roast for 1 hour and 10 minutes. Remove chicken, roasted onions, and lemon. Squeeze roasted lemon into tray juices, slice skin and onions, return to tray with rice and water. Cover and cook for 12 minutes. Serve rice with chicken, resting juices, roasted onions, and tzatziki. Drizzle with olive oil and serve with pickle and lemon for squeezing.
