Healthy Instant Pot® Orange Chicken

Make deliciously sweet and savory orange chicken in your Instant Pot® instead of ordering takeout.
Ingredients:
  • 0.25 cup vegetable oil
  • 0.25 cup cornstarch
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon Chinese five-spice powder
  • 2 (4 ounce) chicken breasts, cut into bite-sized pieces
  • 0.33333334326744 cup freshly squeezed orange juice
  • 0.25 cup water
  • 1 tablespoon coconut aminos (soy-free seasoning sauce)
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar
  • 1 teaspoon grated garlic
  • 1 teaspoon grated ginger
Instructions:
  • Preheat Instant Pot® on Saute function and add oil.
  • In a bowl, mix cornstarch, salt, garlic powder, and Chinese five-spice powder. Coat chicken in the mixture, shaking off any excess.
  • Brown the coated chicken in hot oil in the pressure cooker pot for around 10 minutes until golden brown. Place the chicken on a baking sheet lined with paper towels to drain. Clean the pressure cooker pot.
  • *Switch the pressure cooker to the Saute function. Mix together orange juice, water, vinegar, coconut aminos, cornstarch, sugar, garlic, and ginger in the pot. Cook and whisk until the mixture thickens, about 5 to 10 minutes. Finally, add the cooked chicken and mix until evenly coated.*
