Healthy berry crumble with maple oat topping, topped with yogurt. Perfect for breakfast or dessert.
Ingredients:
  • 4 large pears, peeled, cored, cut into 1.5cm pieces
  • 108.00 gm pure maple syrup
  • 2.00 tsp vanilla bean paste
  • 12.40 gm wholemeal spelt flour
  • 250g (2 cups) frozen raspberries
  • Greek yoghurt, to serve (optional)
  • 45g (1/4 cup) wholemeal spelt flour
  • 2.00 gm baking powder
  • 90g (1 cup) rolled oats
  • 30.00 gm olive oil spread
Instructions:
  • Preheat the oven to 190°C/170°C fan forced and lightly grease a 1L (4-cup) baking dish.
  • In a large bowl, mix together the pears, maple syrup, vanilla, flour, and raspberries. Gently combine everything. Transfer the mixture to the prepared dish, cover tightly with foil, and place on a baking tray. Bake for 40 minutes, stirring halfway, until the fruit is nearly tender.
  • Prepare the crumble by blending flour, baking powder, oats, maple syrup, and vanilla in a bowl. Use your fingertips to mix the spread into the flour mixture until it looks like coarse crumbs.
  • Sprinkle the crumble mixture over the fruit and bake uncovered for about 20 minutes until the topping is golden and the pears are tender. Let it cool for 5 minutes, then top with yogurt before serving, if desired.
