Spicy pear and bulgur salad - a heart-healthy, flavorful side dish from Betty Crocker's cookbook.
Ingredients:
  • 2 cups boiling water
  • 2/3 cup uncooked bulgur
  • 2 medium pears, peeled and coarsely chopped (about 2 cups)
  • 1/2 cup raisins
  • 1/4 cup orange juice
  • 2 tablespoons packed brown sugar
  • 1 teaspoon ground cinnamon
Instructions:
  • Place bulgur in a medium bowl and cover with boiling water. Allow it to soak for 1 hour. Drain any excess water and let the bulgur cool for 15 minutes.
  • Combine the bulgur, pears, and raisins in a large bowl.
  • Combine orange juice, brown sugar, and cinnamon in a sealed container and shake well. Pour the mixture over the bulgur and toss to combine. Chill in the fridge for 1 to 2 hours to enhance flavors.
